As the semester starts and you want a quick bite to make at your dorm or bring for an awards show watch party, these are quick to make with only three ingredients that you use up in one recipe! Goat cheese is a semi-spreadable, crumbly cheese, so if you want to try other cheeses like feta or non-dairy ingredients with a similar texture, you can play with modifications as desired. This recipe makes about 10-15 puffs. They’re perfect as a healthier side when you’re craving a crispy, flavorful snack with all the nutritional benefits of sweet potatoes, nuts, and cheese.

Ingredients:

1 medium sweet potato

1/2 oz goat cheese

1/4 c finely chopped macadamia nuts

Directions:

Stab the sweet potato all over with a fork and microwave on high for 5-6 minutes until cooked. Scoop the sweet potato flesh into a small bowl. Add the goat cheese and mix until well combined. Take a small amount of the mixture and roll into a bite-sized ball. Roll the ball in the chopped nuts, pressing gently to help them stick. Bake at 425 degrees for 10 minutes, rotating once until the nuts start to turn golden brown. Serve warm.
