Stuffed peppers are a great affordable, easy and healthy meal option. The best part about this recipe is that you can customize the stuffed pepper based on your personal food preferences. This recipe is just one of the many variations of stuffing you can make. Some options include zucchini, tomatoes, beans, sausage and hot peppers, so this recipe can easily be altered to your liking. This is perfect to eat as a meal for a large group of friends or on the go! This recipe serves 4-6 people.

Ingredients: 

Bell Peppers of any color (1-2 per person is a suggested serving)

8 ounces of ground turkey 

Whole jar of salsa 

1 chopped up bell pepper

1 onion, chopped finely

2 cloves of chopped garlic

1 box of orzo pasta

Cheese blend of your choice 

Directions:

First, preheat the oven to 350 degrees prior to starting the meal prep. Start by browning the ground turkey with olive oil in a frying pan over medium heat. While the turkey cooks, add in chopped onions, minced garlic, a jar of salsa, chopped up bell pepper, oregano, salt and pepper. Then, let it cook until it is white with no pink color. Feel free to add any other seasonings or spices. 

Next, bring a pot of water to a boil and pour in half a box of orzo (cooking time about 10 minutes). Once cooked, add in a blend of cheese, stir and combine ground turkey with the orzo pasta. Set aside the stuffing and carve the tops off of the peppers and remove the stem and seeds inside. 

Once completely carved out, begin by taking your mixture and stuffing the peppers until full. Add cheese or other garnishes to the top. Place stuffed peppers into a casserole dish and cover dish with foil. To ensure it bakes properly, pour a small amount of water into the bottom of the baking dish. Bake for 30 minutes.
