Caf Review

Going into the caf for dinner the other day, I was super excited to see that they were serving one of my favorite caf meals: garlic and red pepper chicken with Parmesan rice. The chicken can sometimes be a bit dry, and has more of garlic than  red pepper taste (which is disappointing, as I love crushed red pepper and would sprinkle it on literally anything) making the Parmesan rice truly the highlight of the dish. The rice is creamy, gooey, cheesy – everything you would want to have when you hear “cheese rice” – and is somewhere in-between an Italian Risotto and a classic Mac & Cheese. Honestly, I could eat just a heaping plateful of that rice without the chicken, which in comparison seems like more of an afterthought (but still made me feel better about my otherwise carb-ridden meal). To go along with the chicken and rice, I had some roasted butternut squash that matched my fall-mood, but it was a bit bland and mushy. With a bit of salt and pepper, however, it was pretty good – and made me excited for pumpkin season.
