Batter Up: Cannoli Cupcakes

his treat is a fun new twist on an old Italian classic. This quick recipe makes the icing and filling for 12 cupcakes. 

Ingredients:

15 ounces of ricotta cheese

8 ounces of mascarpone (room temperature)

1 cup of powdered sugar

1 teaspoon of vanilla

1 cup of mini chocolate chips

2 cups of dark chocolate

3 tablespoon of coconut oil

Preparation:

First make the vanilla cupcakes then allow the cupcakes to cool completely. In a large bowl combine the ricotta, mascarpone, powdered sugar, and vanilla and mix until it is well combined. Next fold in the mini chocolate chips. Take your cooled cupcakes and cut circles in the center of each and press it down into the bottom. Fill this hole with cannoli cream and create a swirl of cream on top. Place the cupcakes in the freezer for an hour until they are firm. Then you should be able to flip them upside down to dip them into the melted dark chocolate and coconut oil mixer (I got too nervous and drizzled it instead). This recipe was from Buzzfeed Tasty.
